We were fighting in the library and I am a Bard that knows Earth trimmer so I cast Earth Tremor just to the side of the warforged we were fighting and the warforged took some damage from not only the Earth Tremor but also from the bookshelf falling on top of him and therefore incapacitating him

One reason many monsters have resistances but very few have vulnerabilities is that resistances make combat more interesting by forcing players to choose alternate ways to attack, while vulnerabilities create just one optimal choice. Also, it's hard to choose the right hp value for a monster with a vulnerability. If the party is able to do a lot of that damage type and you chose a normal hp value for that CR the monster is way too weak, but if you take the vulnerability into account and almost double the hp, the players are screwed if they don't have the correct damage type or don't find the vulnerability.

The most powerful member of my party is a level 11 barbarian, with almost artifact level armour, a strength score of 27 a con score of 20 and a greataxe, and resistance to every damage type known to man, oh and 100 + hit points

In my current One Piece-inspired pirate campaign, I've established a sort of Pokémon type matchup-esque system. You choose what your primary damage type is going to be, and then gain resistance to it and two vulnerabilities. As you level, you can gain more resistances and you even shed one of your vulnerabilities later on. This applies to (most) of my enemies as well

Imagine they start clearing through the skeletons with a hammer until they meet one that seems off, perhaps a darker shade and sluggish movements. It slowly steps towards them, but when the barbarian tries to smash it with the hammer, the weapon bends around the frame of its bones, leaving the skeleton completely unphased. The skeletons turns its lifeless stare towards the barbarian and almost seems to smile, twisting its own skull into an unnerving shape. Congratulations, now you have made damage immunities.
